You certainly can. Just wait a few more days after they first say they can be harvested. Instead of rotting, seeds appear and you'll get both veg and more than enough seeds to replant. Don't leave them too long, as they will eventually rot. Yes, you most certainly can. Just wait until the crops hit the 7th stage.
