Spread on a small sheet pan and bake until browned, at least half the fat has rendered (become liquid), and the bacon is crispy. Retain the bacon fat for the dressing, and let the lardons cool to room temperature. Increase the oven temperature to 350°F.I had Virgil's BBQ Salad (barbecue brisket, pork & chicken, hard boiled egg, cheddar cheese, tomato, green onion, olives), and it was good. The strips of brisket were incredibly flavorful, tender and moist. The rest of the table ordered a variety of sandwiches, po' boys and flat dogs.
For the Wings. Mix all items together and marinate chicken for 24 hours. Remove wings from marinade and place on a sheet pan. Sprinkle with the dry rub (recipe follows). Bake wings on a sheet pan at 350 degrees for 30 minutes. Remove with oven and toss with hot sauce and butter. Serve hot!
